I’ve said it before, and I’ll say it again, when it comes to pizza no one compares to PI Pizzeria. In my opinion, and the Presidents, it’s a must visit when you’re in St Louis or Washington DC! I crave it so often that I decided to make my favorite pizza at home. The Cherokee Street is spicy, tangy, and all around yummy, so here’s my version!
Two boxes Jiffy Pizza Crust
Roasted Red Peppers
Chorizo Sausage, 1 tube
1/4 Cup Mozzarella Cheese
1 Large Onion, (red or white, its up to you)
2 tsp Balsamic Vinegar
Baby Spinach
1 Tub Goat Cheese
1 Tub Feta Cheese
Crushed Red Pepper
Chipotle Pepper
1 tsp Sugar
Salt & Pepper
Preheat the oven to 400 degrees. Grease a large baking sheet or pizza pan. Start preparing your pizza crust, follow the directions on the back of the box.
After your dough rises, and you have your dough rolled out and ready to pre-bake it should look a little something like this
Now let’s get the toppings together. Chop one half your onion into bite sized chunks and put them in a small bowl, add in your balsamic vinegar, sugar, and salt and pepper to taste. Keep covered in fridge until your crust is ready to top!
Also chop your roasted red peppers, you can do as much as you like on your pizza, I used about one and a half peppers.
Now its time to top your crust! First add your Mozzarella cheese, spreading it all over the entire crust.
Next, get your onions out and sprinkle them on, It’s okay to let some of the juices get all over the pizza, more flavor!
Next, add your chopped red pepper. Shred spinach into bite size pieces and add it to your pizza as well, the amount is up to you!
Now its time for Chorizo! Slice open the packaging and then pinch off little bits and scatter them evenly around your pizza, the more you add the better!
Open your containers of Goat and Feta, sprinkle evenly over pizza. You will probably use the entire container for both.

Once you have a good cover of cheese, sprinkle your entire pizza with your desired amount of crushed red pepper and chipotle pepper. Be careful, because the more you add, the hotter this pizza gets!
Bake in the over for about 13 minutes depending on your oven. Should have a golden crust and the Chorizo should be browned when fully cooked.
Cut it up, and enjoy! This pizza is so delicious, you’ll be making it all the time!
