The weather is going to start cooling off here soon and it’s going to be time to whip out all of your favorite fall food recipes! When it’s a chilly night my family loves a good bowl of soup and this recipe is always a hit with my husband and my littles. It is spicy and sweet, easy to cook, and so easy to customize. The perfect soup for just about anyone!
Here is what you’ll need:
1-2 pounds of chicken breast cut into bite size pieces (of course this can be substituted if you’re a herbivore)
1 chopped onion
1 clove garlic, minced
3 tbs butter (this can also be substituted if need be)
2 cubes chicken bouillon
1 cup hot water
2 cups half and half (again, you can totally switch this out)
2 cups cheese (we used shredded sharp cheddar)
1 can creamed corn
1 can green chilies
cumin, chipotle chili powder, salt, pepper, and hot sauce to taste.

In a large pot brown chicken, butter, onion, and garlic making sure not to burn the butter or garlic, that leaves an icky bitter taste and will ruin your yummy soup! While your chicken is going, dissolve your bouillon cubes in the cup on warm water, usually there is directions on how to do this on the packaging. After everything is looking browned add your cup of water and dissolved bouillon into the mixture and season with cumin, chipotle, salt, and pepper. I left the amount of these seasonings up to you because everyone has different tastes. We like to kick up the spicy in our house but it may not be your style. Make it how you like it!
Bring the soup to a boil and then reduce and simmer for about five minutes. When your timer dings add in your half and half slowly, making sure to stir while your pouring. Next, slowly add in your cheese of choice, making sure you are combining it while pouring it in, we don’t want big ole’ hunks of cheese so make sure it’s fully combined before you’re ready to add anything else.
Now it’s time for creamed corn and green chillies! Stir those right in with your preferred amount of hot sauce and let it sit and heat through out. Don’t forget to give it a stir every once in awhile so it doesn’t burn or separate. Now you’re ready to plate and garnish! Besides tomatoes and green onions you could also add a dalop of sour cream, a sprinkle of goat cheese, a few jalapenos, whatever you like!
