
- 1 ½ cups flour
- 1 ¼ cups unsweetened almond milk
- ½ cup coconut sugar, packed
- 3 mashed ripe bananas
- 1 large egg
- 2 tablespoons local honey
- 1 tablespoon coconut oil
- 1 teaspoon pure vanilla extract
- ¼ cup coconut flour
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- 1 tsp cinnamon
- ¾ cup mixture of flax seeds, rolled oats, and chai seeds
- 1 drop copabia essential oil
- 1 drop fennel essential oil
- (Vitamin D optional)
Crunchy Oat Topping:
⅓ cup oats
1 tablespoon melted butter
1 tablespoon raw honey or real maple syrup
1 teaspoon coconut sugar
Preheat oven to 325 degrees Fahrenheit and grease your muffin tin if necessary! In a large bowl, beat the coconut oil and honey together with a whisk. Add egg and beat well. Mix in the mashed bananas and milk, followed by the baking soda, vanilla extract, essential oils, salt, and cinnamon. Now for the dry ingredients! Add both flours and your oat and seed mix to the bowl and combine with a large spoon. If you’d like to add any additional mix-ins, like nuts, chocolate or dried fruit, now’s the time to fold them in! Then let’s make the topping! This is definitely my favorite part of the whole muffin! Stir together your ingredients into a small bowl until well combined and set aside until your ready to top! Divide the batter evenly between the 11 muffin cups, filling each cup about two-thirds full. Sprinkle the tops of the muffins with a small amount of your crunch oat topping. Bake muffins for 23 to 25 minutes, or until a toothpick inserted into a muffin comes out clean. Place the muffin tin on a cooling rack to cool. You might need to run a butter knife along the outer edge of the muffins to loosen them from the pan. You can enjoy these warm on their own or with a little nut butter spread over the top for a little bit o protein too. Muffins are great because you can pack so much punch into such a tasty little treat. I love whipping these up for breakfast when I feel like I could use some support or as a snack during the day when my nursing hunger strikes
